Begin by setting the Instant Pot on the saute setting.
Add the olive oil and heat.
Add the chopped bacon and cook until cooked thoroughly.
Add the onions and carrots and cook until the onion is slightly translucent.
Add the garlic, rosemary sprig, thyme, and Italian seasoning, and cook until fragrant.
Add the chicken breast and the broth.
Close the lid and valve and set on high pressure for 12 minutes.
Manually release steam and open the valve and lid.
With the help of two forks, roughly shred the chicken.

Ingredients
- 3 Tbsp olive oil
- 6 slices bacon, chopped
- 1 Onion, chopped
- 2 Carrots, chopped
- 2 Garlic cloves, minced
- 1 Chicken breast
- 2 cups broth
- 1 Rosemary sprig
- 2 Tsp Italian seasoning
- ¼ Tsp dried thyme
- Salt and pepper to taste
- 1 Pound gnocchi
- 2 cups spinach, chopped
- ½ Cup heavy cream
- ⅓ Cup parmesan cheese
Instructions
- Set the Instant Pot on the saute setting. Add the olive oil and heat. Add the chopped bacon and cook until cooked thoroughly around 5 minutes. Notes
