- ½ cup of chopped green bell pepper.
- ½ cup of chopped yellow onion.
- 1 ½ tablespoon of seasoning with achiote and cilantro.
- 1 tablespoon of minced garlic.
- 2 tablespoons of finely chopped fresh cilantro.
- 1 tablespoon of oregano.
- 2 cups of medium Grain Rice.
- 1/3 cup of tomato sauce.
- 1 can of green Pigeon Peas.
- 1/4 cup of sliced olives stuffed with pimentos.
- 3 cups of chicken broth.
Preparation:
- In a saucepan pour olive oil and cook at medium-high heat.
- Incorporate ham or bacon until it is brown.
- Add pepper and onions. Stir very well and cook for 10 minutes.
- Incorporate seasoning, garlic, oregano, and fresh cilantro.
- Add rice and mix until rice is fully coated in oil and toasted.
- Pour tomato sauce, pigeon peas, olives, and 1½ cups water. Mix all very well.
- Bring to a boil uncovered for 10 minutes.
- Cover the saucepan and cook at low heat until the rice is tender.
- Serve.
Rice with pequi
Servings: 6 Prep time: 5 minutes Cook time: 25 minutes
Ingredients:
- 1 cup of vegetable oil.
- 2 cups of pequi.
- 2 chopped cloves of garlic.
- 1 chopped yellow onion.
- 3 cups of long-grain rice.
- 2 cups of chicken broth.
- 4 cups of water.
- 2 tablespoons of chopped green onion.
- Salt and pepper to taste.
Preparation:
- In a saucepan, pour water and chicken broth. Bring to a boil.
- Meanwhile, put a skillet at medium heat, add the vegetable oil and fry pequi. Then, incorporate onion, garlic, salt, pepper, and rice. Stir very well.
- Add the boiled water and broth to the skillet. Cook covered until liquid is absorbed.
- Serve with green onion on the top.
