Valentine Cereal Bars Recipe

Can you believe that Valentine’s Day is already around the corner? This time of the year gets a little hectic for me. I’m still recuperating from the craziness of the holidays. I want to make sure my budget is in control because I like to save for upcoming trips in the summer.

My Valentine Cereal Bars are easy to make and won’t break the bank. I mean, who can ever say no to a batch of cereal treats? They’ve got a romantic flair with dipped chocolate but still look festive with its bright pink sprinkles. They’re the perfect dessert for Valentine’s Day celebrations. Not only that, they’re really easy to transport, so your kids can bring them to school. Hello, V-Day bake sale!

Valentine Cereal Bars

3 cups marshmallow
2 tbsp butter
1 tsp vanilla extract
2 cups rice-pop cereal
8 oz dark chocolate
1 tbsp coconut oil
heart-shaped sprinkles

Yields: About a dozen bars

Start off by placing parchment paper on a rectangular pan. Set aside.

In a glass bowl, melt your marshmallows and butter in 45-second intervals in the microwave. It should take about two 45-second intervals until marshmallows are melted/softened but not burned/cooked. Pour in your vanilla extract

Add rice-pop cereal into your marshmallow mix and combine. Pour into pan and even out so that the top is flat. Let the cereal treats sit in the fridge for about 30 minutes to 1 hour.

Once set, cut into bars. In another glass bowl, melt your chocolate and coconut oil in the microwave for 30-second intervals until completely melted. Dip about 1 inch of each cereal bar into the chocolate. Top generously with your themed-sprinkles. Let set in the fridge for another 10 minutes.
