Summer is here and so are our family get together’s, parties, and of course the good ole barbecue that we all love and look forward to. We tend to make a lot of things for these get together’s that we have, but one of my favorite meals is of course salad, salad is something that goes with every meal in my house. I try to mix things up when preparing my salad by adding lots of different things to make it interesting and very eye appealing to the guests. Sometimes I will do a salad with lots of fruit added to it like strawberries and blueberries, and tangerines, also add sometimes walnuts, sunflower seeds, or whatever my little heart desires. But no matter what salad I make I try to keep it healthy and fresh and I do try to eat clean. A salad is great any time of the year and goes with everything, but I find for me I eat more salad in the summer because it is very refreshing and quick and easy for a good ole healthy meal. Sometimes if I don’t want a salad, I will find myself making a good Healthy Cobb Salad.
A Healthy Cobb Salad to me is not just healthy, but it is utterly delicious and has all of the goodness that you are looking for. A healthy Cobb salad cuts over half the fat and calories out and makes for an ultralight recipe, has all of the goodness in one bowl that you are looking for, it’s one healthy order. A healthy Cobb salad to me is some fresh yummy cucumbers and cherry tomatoes from our garden, some fresh farm eggs, some Avocado yummy, and of course some chicken and all of this over some fresh romaine lettuce. Sometimes if I want to make the chicken quick, I just use the leftover rotisserie chicken that I just happened to buy a day or 2 ago. Of course, the best part of the recipe to make it really refreshing, of course, is the dressing, you have to have that great dressing with some apple cider vinegar, some honey, bold mustard, olive oil, seasonings, and bam, there you have it a fabulous dressing that is healthy and refreshing. So if you are looking for something really utterly delicious and healthy and quick, give the healthy Cobb salad a try, and it might just be one of your favorite summer meals.

Ingredients

  • 3 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, chopped
  • 3/4 cup cucumber, sliced
  • 1 avocado, peeled, pitted and sliced
  • 2 hardboiled eggs
  • 1 grilled chicken breast

Dressing

  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  •  1 tablespoon bold mustard
  •  3 tablespoons olive oil
  •  Salt and pepper to taste

Begin by prepping and cutting the veggies.

Peel and slice the hard boiled eggs and cut the chicken.

In two bowls divide up the ingredients evenly.

In a small bowl, whisk together the dressing ingredients.
