  • 2 cans of Kidney beans
  • A medium head Iceberg lettuce
  • A package of Corn chips
  • 2 cups of Monterey jack cheese
  • 1 envelope of chili seasoning
  • Hot cooked rice (3 cups)

Directions-

i) Spread out a layer of refried beans at the bottom of a large platter.

ii) Combine the lemon juice, avocados, salt, and pepper while spreading the mixture on the beans.

iii) After that, combine the chipotle and sour cream and spread it on top of the mixture of avocado.

iv) Serve with the hot cooked rice

2.  Thai coconut beef

Thai coconut beef takes approximately 30 minutes to prepare and serve.

Ingredients-

  • 3 pounds boneless roast of beef chuck
  • 1 Teaspoon pepper
  • 1 teaspoon salt
  • 1 Sliced sweet red pepper
  • 1 Coconut milk of 13.66 ounces
  • ¾ Cup beef stock
  • ½ Cup creamy peanut butter
  • ¼ cup red curry paste
  • Tablespoons soy sauce
  • 2 Tablespoons honey
  • ½ Fresh sugar snap peas, trimmed
  • ¼ Minced fresh cilantro (1/4 cup)
  • Hot cooked white or brown rice

Directions-

  1. Sprinkle beef with pepper and salt
  2. In a 5-qt. slow cooker put pepper slices and beef
  3. whisk coconut milk, peanut butter, beef stock, soy sauce, curry paste, ginger & honey in a bowl, and then pour over the meat.
  4. While covered, cook on low temperature for 7-8 hours till the meat becomes tender
  5. Remove the beef and let it slightly cool
  6. From reserved juices, skim fat
  7. With two forks, shred beef
  8. Return the beef to a slow cooker and stir in snap peas
  9. While covered, cook at low temperatures for 45-60 minutes
  10. Stir in cilantro and finally serve with rice and any toppings you desire

3.  Sausage ratatouille

Ingredients-

  • 2 pounds of sweet Italian sausage links
  • ½ a can of fresh green beans
  • 2 medium green peppers 
  • 1 Chopped onion
  • 2 Garlic cloves
  • 2 tablespoons of Butter
  • 2 tablespoons Olive oil
  • 5 plums of Chopped tomatoes
  • ¼ Teaspoon of pepper
  • 1/8 teaspoon of ground allspice
  • ¼ Minced fresh parsley
  • 1/3 Grated parmesan cheese
  • Hot cooked rice. The cuisine is also best served hot.

Directions-

  1. Cook sausage over medium heat in a large skillet till it is no longer pink. Drain, remove and cut a half-inch slice.
  2. Cook the green peppers, beans, onion, shallots, and garlic in oil and butter over medium heat till tender. Stir in the tomatoes, zucchini, salt, sugar, pepper, allspice, and pepper flakes. For six to eight minutes, cook and stir until vegetables are tender.
  3. Stir the parsley and sausage and heat through. Sprinkle with cheese and serve with rice.

4.  Chicken wings fricassee

This cuisine takes approximately 35 minutes to cook.

Ingredients-

  • 6 chicken wings
  • ¼ cup all-purpose flour
  • salt and pepper to taste
  • 1 ½ tbsp vegetable oil
  • 1 onion, chopped
  • garlic to taste
  • hot cooked rice.

The preparation also takes about 30 minutes.

Directions-

  1. In three sections, cut the chicken wings and discard the wingtips
  2. Combine flour, ½ teaspoon pepper, and seasoned salt in a shallow bowl
  3. Add wings and evenly toss to coat
  4. Brown wings on all the sides in oil in a large skillet
  5. Add garlic and onions and cook until tender
  6. Stir in salt, water, and remaining pepper and mix well.
  7. Serve with freshly cooked rice.

5.  Turkey curry with rice

Ingredients-

  • 2 cups of chicken broth
  • minced fresh cilantro
  • curry powder
  • garlic cloves
  • ground cardamom
  • pepper
  • 2 carrots, sliced
  • 1 onion, chopped
  • 1 cup frozen cauliflower
  • thawed
  • 3.5 cups cooked turkey
  • 1/3rd cup mango chutney
  •  all-purpose flour
  • coconut milk
  • and hot cooked rice.

Turkey curry with rice is a perfect meal for a weeknight meal.

Directions-

  1. Mix the first seven ingredients in a large saucepan
  2. Add onion and carrots and bring to boil
  3. After reducing heat, simmer and cover until the vegetables are tender
  4. Stir in chutney and turkey as you heat through
  5. Mix the coconut milk and flour until smooth and stir into the turkey mixture
  6. For 1-2 minutes, cook and stir until it is slightly thick.
  7. Serve with rice
