Noodles is always a staple in my house.  You could probably open the cupboard now and see several boxes or packages of noodles. Lately, my teenager daughter has been on a noodle kick I swear.  She LOVES noodles and is always whipping up some creative ways to eat them. Since noodles have been her food of choice, I picked up No Yolks Broad noodles from the store so she could give them a try, since egg noodles are her favorite kind. I wanted to provide her with a healthy egg noodle alternative, and No Yolks is made from egg whites, and no cholesterol plus are low in fat and sodium. That’s a good mom move!

No Yolks noodles always cook up smooth, firm and fluffy, perfect for the noodle lover.

Usually, when people think of noodle dishes, stroganoff and casseroles are the first things to pop up in their head, but we need to step out of the noodle box. No Yolks are incredibly versatile, so yes you can make soups like Miso, French Onion, and Chicken Noodle. Noodles are like a blank canvas; you can add whatever you want to make a meal.  Listed below are items we love to put in our noodles, we pick 1-2 items from each list.  Get creative and make noodles for kids school lunches.

Protein:

  • Ground beef
  • Chicken
  • Bacon
  • Hard Boiled Egg
  • Tuna

Dressing:

  • Alfredo
  • Ranch
  • Butter
  • Pesto
  • Cream of soup

Add In’s

  • Cheese (any kind)
  • Seasonings
  • Veggies
  • Beans
  • Crackers on top

With these ideas, she can have a new noodle recipe every day of the week for her school lunch. Another cool idea she had was putting her noodle recipes in a mason jar.  This week we made this quick and simple Pesto Chicken No Yolks Noodle recipe.

No Yolks Pesto Chicken

Simple Noodle Recipe for LUNCH

  • 2 1/2 tablespoons Pesto
  • 2 tablespoons Olive oil
  • 2 tablespoons Grated Parmesan cheese
  • 1 package No Yolks noodles
  • Salt & Pepper to Season
  1. Boil noodles then drain
  2.  Heat the oil in a frying pan over medium-low heat. Add pesto, salt, and pepper. 
  3. In a large bowl, mix pesto mixture into pasta. Stir in grated cheese. Serve.

You can add veggies like corn, peppers, broccoli.  Chicken would also make this a superstar meal.
