Pineapple Delight is the Perfect Summer Dessert

    A friend of mine taught me how to make this years ago. So long ago in fact, that I don’t remember if it was even an actual recipe, or just a yummy idea she created. Either way, its fabulous! While my husband and son won’t eat it (my son doesn’t like cream cheese, my hubby doesn’t like pineapple,) the rest of my family adores it. Thus the name, Pineapple Delight. 

    It’s super easy to make, and perfect for a blazing summer day. Since we’re all in a heat wave, I thought I’d share it with all of you this month.

Here’s what you need:

Premade graham cracker crust OR to make your own: 1 sleeve of graham crackers, 4 tbsp butter

1 brick of cream cheese (8 0z)

1 small tub of whipped topping

1 can pineapple (doesn’t matter if it’s rings or chunks because you’ll blend it up.)

a blender or food processor

pie plate if making your own crust

 

Getting started:

If making your own crust, melt the butter in the microwave. Add one sleeve of graham crackers to blender, and turn into crumbs. Pour crumbs into pie plate, add butter, and mix til all moist. Using tablespoon, press crumbs all around pie plate. 

Filling: In blender combine brick of cream cheese, DRAINED pineapple, and 2/3 bowl of whipped topping. Blend well. 

Fill crust, and set in freezer until solid.

Remove from freezer, and top with remaining whipped topping. Place back into freezer until time to serve.

This frozen pie tastes incredible! It’s not too sweet, not too tart. Hope you enjoy it as much as my family does.
