Fall is Crock Pot Season

    I normally write about special needs, for my monthly post. I’m going to mix it up a bit this month. Recently I made a new crock pot recipe I found floating around the internet. It’s too good not to share!! Also, for many, fall means breaking out the crock pot. Time for comfort meals! This is that.

          Mozzarella Meatballs

    So what do you need? Easy! You need a pound or two of ground beef. Breadcrumbs, an egg or 2, seasoning of choice, spaghetti sauce and mozzarella sticks. Oh and a crock pot of course!

    Next you’re going to mix up your ground beef as if you’re making meatloaf. I season mine with Italian seasoning or McCormick hamburger seasoning. Once that’s done, set it aside in the fridge.

 

    Get your mozzarella sticks and cut them into chunks. Not too big, not too small. Once you’ve done that, get out your ground beef mix. 

    Start by pouring some spaghetti sauce in the bottom of the crock. Then make a meatball, and then put a chunk of mozzarella inside. Close meatball around the cheese and lay in the crock pot. Repeat this until you have the bottom of your crock covered with meatballs. Pour some spaghetti sauce over that. Now start your next layer of meatballs. Do this until you have used all your meat and cheese. 

    Top off with spaghetti sauce, turn on low, and in a few hours dinner will be done. You could  sprinkle shredded mozzarella on top too. Adding in sweet pepper would be another nice touch. 

    What’s great is these meatballs are good with spaghetti or on a sub roll. Day two leftovers are even better!
