Bunny Sugar Cookies

Step aside, royal icing… I’ve got some fondant and they are ready to make my Bunny Sugar Cookies look amazing! These bunnies are so adorable, almost too adorable to eat! They make the best dessert for Easter or even spring and will hop right off the plate, right into your mouth!

Don’t get me wrong, I’m a huge fan of royal icing. However, when I’m in a rush, the drying time on royal icing just doesn’t cut it.

In comes: rolling fondant. It’s what I used to give my Bunny Sugar Cookies a burst of color. I don’t want to toot my own horn, but they came out absolutely adorable, didn’t they?!

I can’t wait to serve these cookies to my guests this Easter. I bet everyone will love it! I opted for pastel colors to give it a true springtime look. These Bunny Sugar cookies hold their shape nicely and stay nice and chewy in the center and crisp on the edges.

How To Make Bunny Sugar Cookies

These cookies will come together fast. Made from my delicious sugar cookie recipe and then add the fondant and you will be enjoying them in no time! Yummy, sweet sugar cookies and fondant makes the best Easter cookies you will bite into.

Ingredients Needed For Bunny Sugar Cookies

To Make The Cookies

  • Sugar
  • Unsalted butter
  • Egg
  • Flour
  • Vanilla Extract
  • Baking Powder
  • Salt
  • Bunny Cookie Cutter

To Decorate

  • Purple rolling fondant
  • Pink rolling fondant
  • Unsalted butter
  • Confectioners’ sugar
  • Milk

For The Cookies:

  • In a large bowl, cream together sugar, butter, egg, and vanilla.
  • In a small bowl, sift together flour, baking powder, and salt.
  • Slowly add dry ingredients into egg and sugar mixture. Knead until cookie dough forms.
  • Wrap cookie dough in plastic and refrigerate for at least 30 minutes.
  • Remove cookie dough from the fridge and preheat oven to 375 degrees F.
  • Line a baking sheet with parchment paper and set aside.
  • Dust a rolling pin and a clean working table with flour. Roll out the dough until it’s about ¼ of an inch thick.
  • Cut out 14-16 bunny cookies with the help of the cookie cutter.
  • Place each bunny cookie on the lined baking sheet. Bake for 6-7 minutes.
  • Remove from oven and allow to cool on a wire rack.

To Decorate:

  • On a clean surface, use a rolling pin to roll out each of the fondants.
  • Using the same cookie cutter, cut out 7-9 bunnies from each fondant color. Set aside.
  • Add butter, confectioners’ sugar and milk in a medium-sized bowl.
  • Use an electric mixer to beat together the ingredients until well-combined. Start on low and gradually increase to high. (These ingredients will make up your buttercream).
  • Use an offset spatula to add a thin layer of buttercream in the center of each cookie – this will help the fondant stay on the cookies.
  • Press one bunny fondant on each cookie.
  • Scoop the remaining buttercream in a piping bag, with Wilton tip #21 attached.
  • Frost a bunny buttercream tail on each cookie.

How Long Does It Take Fondant To Dry

You should let the fondant dry fully, it can take about 10-15 minutes. Then you can either put them into baggies or a container.

How Long Do Sugar Cookies With Fondant Last

They should stay fresh for up to 1 week. Place them in a airtight container and store them in a cool and dry place away.

  • 1 stick unsalted butter, softened
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 2 cups a/p flour + extra for rolling
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 bunny-shaped cookie cutter

To decorate:

  • 5-6 oz. purple rolling fondant
  • 5-6 oz. pink rolling fondant
  • ¼ cup softened unsalted butter
  • 1 cup confectioners’ sugar
  • 1-2 tbsp milk
