The following ingredients are going to be needed:

½ cup of almond flour

½ cup of tapioca flour

¼ cup unsweetened applesauce

1 tsp, baking powder, aluminum free

½ tsp. vanilla extract

2 eggs

1 cup of seasonal berries

1 tbsp. lemon juice

1 tbsp coconut oil

To make the pancakes:

In a large bowl mix all of the dry ingredients. In a separate bowl mix all the applesauce, vanilla, and eggs. Add this to the dry mixture. Heat the coconut oil in a pan over medium heat. Add the batter and cook 3 to 4 minutes per side or until golden brown.

To make the sauce:

Put the berries and lemon juice in a saucepan. Cook over low heat until the fruit cooks down. Serve the sauce of the pancakes.

6 eggs

8 ounces bacon, chopped

3 cups of flour

2 tsp baking powder

½ tsp baking soda

½ tsp salt

½ tsp black pepper

1/3 cup oil

1 ¼ cups of buttermilk

1 ½ cup grated cheddar cheese

The oven needs to be preheated at 350 degrees.

Put the eggs in a saucepan and cover them with water. Bring the water to a boil. Remove from heat. Allow the eggs to sit for 10 minutes and then peel them.

Cook the bacon until it is browned.

Mix the flour, baking powder and soda, salt, and pepper. In a separate bowl mix the buttermilk and oil. Add to the flour mixture. Add the bacon and a cup of cheese.

Put this mixture into greased muffin pans. Press an egg into the center of the batter.

Top each of the muffins with the remaining cheese. Bake the muffins 17 to 20 minutes until they have a golden color. Allow the muffins to cool for 5 minutes and enjoy.
