It's not always easy getting creative with salads – at least, it isn't for me. Luckily, my husband's got his tuna salad recipe locked-down.

Can I tell you guys a little secret? Okay, here goes nothing…
My salad game is not strong.
Like, at all.
It's without a doubt that I love being in the kitchen. I have a total sweet tooth, so you can always find me whipping up some sort of dessert. In fact, I'm a self-proclaimed cookie enthusiast. In the past, I've whipped up a batch of Chewbacca Cookies and even these Mummy Sugar Cookies.
I mean, my salads are good but they just don't step up to my husband's. In our household, he's totally in charge of the salads for our meals.
Hubby was nice enough to share his tuna salad and I am so glad that he did. This is probably one of his best ones. I love that his salads are easy to put-together and always consist of a simple vinaigrette dressing.
Super Easy, Super Delicious Tuna Salad
2 cups iceberg lettuce, chopped
1/2 large onion, diced
2 tomatoes, diced
1/4 cup red cabbage, diced
1/4 cup shredded carrots
1 can tuna
For the sauce:
2 tbsp vinegar
1/4 cup extra virgin olive oil
Salt and pepper to taste
Lime to taste
Yields: 2-3 servings
In a large bowl, toss together lettuce, onion, tomatoes, cabbage and shredded carrots.
In a small bowl, mix together the ingredients for the sauce. Pour over on the bowl of mixed vegetables.
Serve on individual plates and evenly top each plate with tuna.
I'm not joking – that's really it. Yet, it's so tasty and really fills you up! Sometimes, when hubby is feeling adventurous, he'll add hearts of palm and even slices of hard-boiled eggs.

- 1/4 cup red cabbage (diced)
- 1/4 cup shredded carrots
- 1 can tuna

- lime juice (to taste)
