I don’t serve pasta too often because we eat enough carbohydrates as it is (cereal for breakfast, sandwiches for lunch, cookies and chips for snacks). For dinner, I always try to focus on veggies and good sources of protein, but then I’m dealing with complaints from family members (some not wanting to eat their veggies and others not wanting to eat their protein). It’s difficult to find yummy but healthy choices for dinner. Well, now I think I have found a delicious solution to the above dilemma: Cybele’s Free-to-Eat Superfood Veggie Pasta. It’s pasta made out of lentils and veggies! So my family thinks they’re eating pasta, but they’re actually getting their vegetables and protein!

It’s Definitely My New Superfood Favorite

It Makes for an Easy, Yummy Dinner

At first when I cooked Cybele’s Free-to-Eat Superfood Veggie Pasta (I cooked the White and the Green Pasta), it came out of the boiling water kind of mushy looking. I thought I had overcooked it. However, after rinsing with warm water (the box recommends this), the pasta quickly perked up and looked fresh and crisper. I then added olive oil, fresh basil, cooked veggies, and sliced, cooked sausage (my husband insists on meat for dinner, otherwise he’s starving). The end result was a delicious, nutritious dinner (well, mostly nutritious since it was chicken sausage) that everyone loved. And, no one could really tell the pasta was made from veggies and lentils! (If I ate the pasta plain, the veggie and lentil taste is more pronounced, but mixing it with all of the other ingredients, you couldn’t tell that it wasn’t pasta made from grains.)

I definitely love this pasta and want to continue using it for our meals. For me, Cybele’s Free-to-Eat Superfood Veggie Rotini is just such a more healthier choice with so much to offer. I don’t feel guilty eating a 2nd or 3rd helping of this stuff!
