HOW TO MAKE A CHOCOLATE MINT KIT KAT CHEESECAKE

Cheesecake is flavored chocolate and then topped with a mint cheesecake layer that is topped with chocolate frosting and Mint Kit Kat bars for a dessert the whole family will enjoy!

CHOCOLATE MINT KIT KAT CHEESECAKE INGREDIENTS

This decadent Chocolate Mint Kit Kat Cheesecake recipe uses everyday kitchen staples to create a delicious dessert or snack your family will love.

All you need is:

  • graham cracker crumbs
  • butter 
  • sugar
  • cream cheese 
  • heavy cream
  • greek yogurt
  • a few eggs
  • vanilla
  • milk chocolate chips 
  • chocolate brown food coloring gel
  • mint extract 
  • green food coloring gel
  • Betty Crocker Milk Chocolate Frosting
  • Mint Kit Kat Bars 

CHOCOLATE MIN KIT KAT CHEESECAKE RECIPE INSTRUCTIONS

Line the bottom of a 6-inch springform pan with parchment paper. 

Melt the half-stick of butter in the microwave. 

Place the graham cracker crumbs in a bowl, add the sugar, and stir well. Add the melted butter, and stir well to coat. 

Press the graham cracker crumbs into the bottom of the springform pan, and set them aside. 

In the mixing bowl of a stand mixer, place the softened cream cheese, and heavy cream, and blend until smooth.

Add the greek yogurt, eggs, sugar, and vanilla, and blend until smooth and creamy.

Divide the cheesecake filling in half, leaving half in the mixing bowl. Half of the cheesecake in the other bowl.

In one bowl, drop the green food coloring gel and mint flavoring into the cheesecake batter, and stir well, until completely blended. If the cheesecake is not bright green, add more food coloring gel to the cheesecake batter. 

Place the green-colored cheesecake batter in the refrigerator. 

Melt the chocolate chips in the microwave, until the chocolate chips begin to soften. 

Stir them with a spoon until completely melted, and smooth.

Pour the melted chocolate into the mixing bowl with the other half of the cheesecake batter. 

Add the brown food coloring gel, and blend. If you desire a little darker chocolate color, add more drops of food coloring gel, until the desired color is reached.

Pour the chocolate layer of Cheesecake into the Spring-form pan, on the graham cracker crust, and place the pan in the oven at 350 degrees, for 35 minutes.

At the 35 minute mark, remove the pan from the oven, and place it on a hot pad. 

Crush the Kit Kat bars, and sprinkle on top of the chocolate Cheesecake.

Remove the cheesecake batter from the refrigerator, and gently spoon the green-colored cheesecake into the springform pan, on top of the chocolate layer. 

Place the pan back in the oven, and turn the temperature down to 300. 

Place a small ovenproof dish of water on the oven rack under the springform pan. 

Bake the cheesecake until it’s firm around the edges and just a little jiggly in the center. 

Remove it from the oven, and place it on a wire rack to cool to room temperature. 

When cooled to room temperature, cover with parchment paper, and foil, and place in the refrigerator overnight. 

Next, decorate the top by placing the chocolate frosting in a pastry bag with a large fluted tip, pipe dollops of frosting around the edge of the cheesecake. 

Crush the Mint Kit Kat bars, and place the crushed candy bars in the center of the cheesecake. 

Place the long pieces of the Kit Kat bars in-between the dollops of frosting. 

Cut the cheesecake in pieces, and serve!

Yes, you can use regular Kit Kat bars in this recipe instead of Mint Kit Kat bars. The steps will be pretty much the same.

The cheesecake will be a little less minty if you use regular Kit Kat bars.

CAN I USE PEPPERMINT EXTRACT INSTEAD OF MINT EXTRACT?

Yes, you can use peppermint extract instead of mint extract in this recipe.

The mint extract contains both spearmint and peppermint.

Whereas peppermint extract contains only peppermint.

The flavor will change slightly but it will still taste great.

Setting Time 8 hours
Total Time 9 hours 52 minutes

Ingredients

FOR THE CRUST:

  • 2 cups of Graham Cracker Crumbs
  • 1/2 stick of butter - melted
  • 2 Tablespoons of Sugar

CHEESECAKE FILLING:

  • 3 - 8 ounce packages of Cream Cheese - softened
  • 1/4 cup of Heavy Cream
  • 1/2 cup of Greek Yogurt
  • 3 Eggs
  • 1 cup of Sugar
  • 1 Tablespoon of Vanilla
  • 1/2 cup of Ghirardelli Milk Chocolate Chips - melted
  • 4 or 5 drops of Chocolate Brown Food Coloring Gel
  • Goodman's Mint Extract - 4 or 5 drops
  • 6 or 7 drops of Green Food Coloring Gel

TO DECORATE THE TOP:

  • 1 can of Betty Crocker Milk Chocolate Frosting
  • 1 Package of Mint Kit Kat Bars - crushed, you'll need about 1 dozen Mint Kit Kat Bars to make, and decorate the cheesecake

Instructions

  1. Line the bottom of a 6-inch Spring-form pan with Parchment paper.
  2. Melt the half-stick of butter in the microwave.
  3. Place the Graham Cracker Crumbs in a bowl, add the sugar, and stir well.
  4. Add the melted butter, and stir well to coat.
  5. Press the Graham Cracker Crumbs into the bottom of the Spring-form pan, and set aside.
  6. In the mixing bowl of a stand mixer, place the softened Cream Cheese, and Heavy Cream, and blend until smooth.
  7. Add the Greek Yogurt, Eggs, Sugar, and Vanilla, and blend until smooth and creamy.
  8. Scrape down the sides of the mixing bowl, and blend smooth.
  9. Divide the Cheesecake filling in half, leaving half in the mixing bowl.
  10. The half of the Cheesecake in the other bowl; Drop 6 or 7 drops of the Green Food Coloring Gel in the cheesecake batter, and stir well, until completely blended. If the cheesecake is not bright green, drop 2 more drops of the food coloring gel in the cheesecake batter, and stir, continuing until you reach the desired color.
  11. Add 4 drops of Goodman's Mint Flavoring to the green cheesecake batter, and stir well.
  12. Place the green-colored cheesecake batter in the refrigerator.
  13. Melt the Chocolate chips in the microwave for about 45 seconds, at 15-second intervals, until the chocolate chips begin to soften.
  14. Stir them with a spoon until completely melted, and smooth.
  15. Pour the melted chocolate into the mixing bowl, and mix until smooth and well blended.
  16. Add the brown food coloring gel, and blend.
  17. If you desire a little darker chocolate color, add 2 or 3 more drops of food coloring gel, until the desired color is reached.
  18. Pour the chocolate layer of Cheesecake into the Spring-form pan, on the graham cracker crust, and place the pan in the oven at 350 degrees, for 35 minutes.
  19. At the 35 minute mark, remove the pan from the oven, and place it on a hot pad.
  20. Crush 2 or 3 small Kit Kat bars, and sprinkle on top of the chocolate Cheesecake.
  21. Remove the Cheesecake batter from the refrigerator, and gently spoon the green/mint cheesecake into the Spring-form pan, on top of the chocolate layer.
  22. Place the pan back in the oven, and turn the temperature down to 300.
  23. Place a small oven-proof dish of water on the oven rack under the Spring-form pan.
  24. Bake the cheesecake for 30 - 45 minutes, or until it's firm around the edges, and just a little jiggly in the center. (It will set in the refrigerator).
  25. If the cheesecake moves quite a bit in the center, it's not done.
  26. If it wiggles only slightly when moved, it's done.
  27. Remove it from the oven, and place it on a wire rack to cool to room temperature.
  28. When cooled to room temperature, cover with Parchment paper, and Foil, and place in the refrigerator overnight, or 24 hours for best results.
  29. To decorate the top; Place the chocolate frosting in a pastry bag with a large fluted tip, pipe dollops of frosting around the edge of the cheesecake.
  30. Crush 4 Mint Kit Kat bars, and place the crushed candy bars in the center of the cheesecake.
  31. Break 2 or 3 Kit Kat bars apart, so that you have long pieces of the candy bar, and place the long pieces in-between the dollops of frosting. (see photo)
  32. Cut the Cheesecake into 2-inch pieces, Serve, and Enjoy!

Notes

You can use more Kit Kat bars crushed on the top if you prefer. 

You can also break more apart and place more of the long pieces on the top, or alongside pieces of the cheesecake to serve.
