I made eggplant the other night and tried frying the eggplant in the Coconut Oil. Coconut Oil is very good for you and it holds up in heat real well.
I slice my eggplant with the skin on it because eggplant has a lot of nutrition in the skin as well as inside! I season the eggplant with Salt, Pepper, and Garlic powder. (You can bread too but this is a lot healthier and less calories!) Then I place parchment paper in a baking pan, this is great so the sauce and the cheese does not stick to the pan. Very easy clean up!
I usually use my homemade sauce but this time I used Wolfgang Pucks Tomato Basil sauce which has chunks of tomatoes in it and has a great flavor. I used mozzarella cheese that I sliced from a block and just put different pieces all over the eggplant and put some extra sauce on top. This way if you want to serve with Pasta you have some extra sauce in the pan after it cooks or extra to put on the eggplant.
