Kelly’s Famous Leek & Potato Soup

  • 5-7 cups water
  • 2 large white potatoes
  • 1 leek
  • 1 medium-sized onion
  • 4 cloves of garlic
  • Salt and pepper to taste
  • Dill for garnishing


  • In a large pot, bring water to a boil. As water is heating up, chop potatoes, leek (make sure it’s properly cleaned), onion, and garlic.
  • Once the water comes to a boil, add chopped vegetables and bring down to medium heat. Let vegetables cook in the water for about 15 minutes or until potato is soft.
  • Remove pot from heat and let cool for another 15 minutes. Using an immersion blender, blend vegetables and water to a creamy consistency. Add salt and pepper to taste. Serve in a bowl and garnish with dill.


Yields: 4 to 5 servings
