This makes both rice options different in flavor and is worth taking a look at before you opt to make Spanish rice or Mexican rice to go with your main course meal.

This Instant Pot Mexican rice tends to have a spicy kick to it as it has both cumin and Jalapenos.

These two key ingredients make my Mexican rice a little spicier and an excellent side dish for anyone who loves to have a spicy kick to their rice.

Instant Pot Mexican Rice

Ingredients For Instant Pot Mexican Rice

  • olive oil
  • rice
  • Bell pepper
  • Jalapeño
  • Garlic clove
  • paprika
  • cumin
  • oregano
  • Salt and pepper to taste
  • water
  • stock
  • crushed tomatoes
  • Lime
  • Cilantro

Directions For Instant Pot Mexican Rice

  1. Set the Instant Pot on the sauté option. Add the oil and rice and cook for 3 minutes stirring constantly. Add the pepper, jalapeño, garlic clove, and spices and sauté for 3 more minutes.
  2. Pour the water and stock and close the lid and vent.
  3. Set the Instant Pot on high pressure and cook for 5 minutes. Let it rest for 2 minutes and manually release steam.
  4. Open the lid and stir in the crushed tomatoes and petit rest for around 5 minutes.
  5. Fluff the rice and add a lemon juice squeeze.

Ingredients

  • 4 Tbsp olive oil
  • 2 Cups rice
  • 1/4 Bell pepper, chopped
  • 1 Jalapeño, chopped
  • 1 Garlic clove, chopped
  • 1 Tsp paprika
  • 1/2 Tsp cumin
  • 1/4 Tsp oregano
  • Salt and pepper to taste
  • 1 Cup water
  • 1 Cup stock
  • 1 Cup crushed tomatoes
  • 1 Lime
  • Cilantro, chopped
