Honestly, with all the different Gluten free, Sugar Free, Vegan, Fat-Free, Vegetarian, Paleo, autoimmune, diets. It can be daunting to find products that don’t fit into those categories that taste good. I mean vegetarian cheese?? It’s not cheese so of course it’s not going to taste like cheese. We are smart enough to know we don’t want processed crap in our foods but not smart enough to make alternative substitutes that actually have taste unrelated to that of cardboard. Okay, well that is not entirely true! Thank goodness there are some people out there who recognize most of us don’t want to eat cardboard and have worked rather hard to change that.Take Smart Flour for instance, it’s a gluten free dough that i used in many restaurants nation wide and when you need gluten free there is little that taste like the “real” stuff. My dear friend suffers from Ceiliac which if you don’t know is a huge problem because any gluten will seriously mess up your insides. This also means if your food touches or becomes contaminated with gluten you can have issues too! As you can imagine going out to eat with her can be a serious pain. Unless your able to find restaurants that take gluten free seriously! Thankfully there is an increasing awareness from consumer demands to change the market and it has. Here in South Florida I visited the Mellow Mushroom in West Palm Beach, besides their awesome selections of pizza combinations, they feature Smart Flour as their gluten free dough and additionally have a separate gluten free prep area. Now I must tell you the gluten free only comes in one size (med) because it’s pre-made but it’s a perfect size for two! Honestly, aside from the lack of fluffyness that traditional flour dough’s have, the Smart Flour crust was really amazing! It’s more like a flatbread really, and I could have honestly though that it was made from wheat because of all the grainy textures. Now I have had some chewing disgusting gluten free pizzas but I could can see myself ordering the gluten free again on purpose just because the taste was more like a healthy whole grain bread (which I love).What makes the dough so yummy? There are three main ancient grains that reside in the Smart Flour. The first, Sorghum an antioxidant insoluble fiber, a major plus for people with tummy problems. The second, amaranth, a grain with high amounts of protein amino acids, vitamins and minerals. Lastly, there is Teff a bran and germ loaded with calcium. Honestly, after hearing all the incredible goodness that goes into this dough I don’t know if I (a regular flour consumer) can actually say I want to eat “real” dough again! In addition to being in restaurants nationwide like Mellow Mushroom, The Original Pancake House and more. Smart Flour can be found in some area grocery stores in the frozen pizza isle.
