My Homemade Ice Cream Sandwiches are oh-so-delicious. I love how the chocolate cookie balances perfectly with the vanilla ice cream.

You can either make your own chocolate cookies or purchase some cookies and then fill them with vanilla ice cream or another flavor of ice cream. Eat them right away or store them in the freezer for later. 

In less than two hours, you’ll have chocolatey cookies with cold ice cream ready to enjoy!

Cookie Ice Cream Sandwiches

This fun and easy Cookie Ice Cream Sandwich recipe uses everyday kitchen staples to create a delicious summer snack your family will love.

All you need is:

  • some a/p flour
  • high-quality cocoa powder
  • baking powder
  • salt
  • granulated sugar
  • unsalted butter
  • an egg
  • vanilla extract
  • vanilla ice cream

In a medium-sized bowl, sift together dry ingredients: flour, cocoa powder, baking powder, and salt.

In a separate bowl, cream together sugar and butter.

Add the egg and mix well, followed by the vanilla extract.

Slowly add dry ingredients into wet ingredients and mix.

Once cookie dough forms, wrap in plastic and chill in the refrigerator for about one hour.

Remove the dough from the refrigerator.

Preheat oven to 375 degrees F. Line a baking sheet with parchment paper and set aside.

Add flour to a clean working surface. Sprinkle flour on a rolling pin.

Use a cookie cutter to cut out 12 circles of the cookie dough.
