Strawberry Cantaloupe Prosciutto Bruschetta with Balsamic Glaze Recipe

Whenever I’m expecting guests, I always try my best to serve them something unique. I want them to have a full-out dining experience the moment they step into my home: I set up a welcoming atmosphere with dishes and drinks that could strike up a good conversation.

My friends and I have many things in common, and one of these ‘shared interests’ happens to be our love for bruschetta. For a recent dinner party I put together, I knew that I wanted to prepare a serving of bruschetta as an appetizer, but I also knew that I wanted to take it to the next level. I thought long and hard, and that’s when I came up with my Strawberry Cantaloupe Prosciutto Bruschetta with a Balsamic Glaze.

Prosciutto holds a special place in my heart: my family’s been using it in their recipes for as long as I could remember, so it comes naturally for me to incorporate it into my cooking. For my bruschetta, I decided that prosciutto would be the star ingredient, but I love how the sweet fruit and glaze complement the meat’s saltier taste.

I was happy to see that my bruschetta starters were a hit. Try it for your next get together and let me know what you think.

This recipe will yield 12-15 pieces (depending how large your baguette is):

INGREDIENTS
1/2 cantaloupe- diced
1 cup strawberries- diced
8 oz. mozzarella- diced
1/4 cup fresh basil – torn into small pieces
1/4 cup olive oil
1 large French baguette
1/3 cup brown sugar
1 cup balsamic vinegar
4 slices prosciutto

 

DIRECTIONS
1.  Slice baguette diagonally into 1-inch pieces and place on shallow baking pan.
2.  Brush with olive oil and broil on high for 3-4 minutes or until golden brown and toasted. Set aside to cool.
3.  In a large bowl, add the fruit and basil. Gently toss, cover and chill while preparing glaze.
4.   In a small saucepan, add the sugar and balsamic vinegar. Stir to combine.
5.   Over medium heat, stir occasionally until the mixture thickens and reduces by half. This process usually takes about 15 minutes. Remove from heat and let cool.


6.   In a large mixing bowl, add the fruit, mozzarella, and basil. Gently toss to combine. Cover and chill until serving time.
7.   Right before serving, spoon the fruit and cheese mixture on top of each baguette. Top with prosciutto pieces.
8.   Lightly drizzle the balsamic glaze on top and ENJOY!!
