There is so much history, in Smithfield Va. And the center of all of this is the Smithfield Smokehouse. This is where all of the all of the production of making, the world famous ham. Everything is done here, from the beginning to the end. The full life of ham, all of the different cuts, the whole salting and curing of the ham, takes weeks and weeks to get to get it to the perfection that it is today.
The smoking is done upstairs in the darkened tunnel, of 30 smokers and they hold up to 3500 hams at one time. The workers climb on the side of these, smokers to place each ham to hang for the set period. At one time there are only two going at the same time, this is done so they can keep track of the time they are there for.
Back downstairs is where all of the packing takes place, everything is done with such love, seeing how they take the time to pack the hams for the customer. there is so much to see and learn at the Smokehouse.

State of the art kitchen , where chefs from around the world come and tape their shows. Here we learned where bacon comes from , and what part of the hog is where the ham and tenderloin come from. We watched JashShook and Tuffy Stone teach how to carve a half of hog, into all the pieces that we eat.
A learning experience to say the least. This is where the technically-advanced Innovation Center is at our customers’ disposal to develop new products for the marketplace.
This hog when it came in weighed 270 lbs, fresh from the day before. Amazing to learn so much about the different cuts , and where they come from .
