Autism Ribbon Cupcakes Recipe

April is the month that we take notices of all the Autistic individuals in the world. Kids and Adults who have Autism aren’t to be treated any different than anyone else. If you know someone who is autistic or have a family member who is autistic, then how about surprising them with a special treat. Autism Awareness Month should be recognized by people all over. Autism Chocolate Cupcakes
Chocolate Cupcake
Cupcake Ingredients:
1 3/4 C Flour
2 C Sugar
1 C   Cocoa
1 1/2 TSP Baking Soda
1 1/2 TSP Baking Powder
1 TSP Salt
2 Eggs
1 C Whole Milk
1/2 C  Oil
2 TSP Vanilla
1 C Boiling Water
Cupcake Directions:
-Preheat oven to 350 degrees.
-Line the cupcake tins with paper liners.
-Mix the flour, sugar, cocoa, baking soda, baking powder, and salt in a bowl.
-In a separate bowl add the eggs, whole milk, oil, and vanilla.
-Add the bowl containing the eggs, whole milk, oil, and vanilla to the bowl holding the dry ingredients.
-Mix all together until fully incorporated.
-Beat for 3 minutes on medium.
-Slowly add the boiling water starting with a small amount then pour in the remaining boiling water.
-The batter may be a little runny.
-Scoop batter into cupcake lined cups until 3/4s filled.
-Bake at 350 degrees for 20-25 minutes.
-Remove from oven and allow to cool for 10 minutes.
-Take out of the cupcake pan placing on a wire rack until completely cooled.
Frosting Recipes:
Frosting Ingredients:
1 C soft unsalted butter
4 + C powder sugar
4 TBSP heavy whipping cream
Frosting Directions:
-Cream the butter and powder sugar until it looks light and creamy.
-If it doesn’t cream add several drops of the heavy whipping cream until it creams.
-Test to see if the frosting can form and hold a stiff peak by taking a spoonful of frosting and turning the spoon upside down. If the frosting stays on the spoon it is ready if not then….
– Add more powder sugar 1/2 C at a time…. mix well.
-Test to make sure that the frosting can make and hold a stiff peak.
-If ready scoop the frosting into a pastry bag with a large tip.
-Twist the open end of the pastry bag to push the frosting to the tip.
-Start the frosting on the outside edge of the cupcake working to the center of the cupcake.
Royal Icing Recipe:
Icing Ingredients:
2 egg whites
1/4 tsp cream of tartar
1 tsp almond extract
2 + C powder sugar
Red, blue, green, black, and yellow food coloring
Icing Directions: 
-Combine all ingredients except the food coloring in one bowl on medium speed for 4 minutes.
-Divide the frosting into 4 equal parts plus 1 bowl with 2 TBSP, put each into separate bowls.
-In bowl #1 add 4-5 drops of red food coloring to the white frosting.
-Stir to mix the colors well.
-In bowl #2 add 4-5 drops of blue food coloring to the white frosting.
-Stir to mix the colors well.
-In bowl #3 add 4-5 drops of green food coloring to the white frosting.
-Stir to mix the colors well.
-In bowl #4 add 4-5 drops of yellow food coloring to the white frosting.
-Stir to mix the colors well.
-In bowl #5, put your 3 TBSP of frosting in and add 2-3 drops of black food coloring.
-Stir well.
Autism Puzzle Piece:
-Search Google for the Autism Puzzle Piece.
-Copy/paste to word.
-Save to your folder.
-Print the puzzle piece.
-Once printed, tape that page to a cookie sheet.
-Cut/tear a sheet of wax paper.
-Tape the sheet of wax paper over the sheet with the puzzle on it.
-Using the royal icing outline the puzzle piece with black.
-Using your printed piece as a pattern fills in the puzzle as displayed.
-Allow 5-10 hours to dry.
-Make sure that the puzzle piece is dry, gently push in on one of the puzzle pieces.
-If the piece allows you to push in they are not dry.
-If so then allow more time to dry.
-Remove the tape holding down the wax paper with the puzzle pieces on it.
-Cut the wax paper into squares surrounding the puzzle pieces.
-Gently peel of the wax paper from the back of the puzzle piece.
-Make a small cut in the center of the frosting on the frosted cupcake.
-Place the dried puzzle piece in the cut in the frosting.
