5 Steps to changing the way you eat!
Food is fuel. I keep telling myself this any time I am eating just for the fun of eating. Food is a fuel our bodies use to maintain energy and make it through the day. I was thrilled to read this book on how to switch to a plant-based diet.
Ms. Karlsen offers you a complete guide to switching your diet. If you have been trying to eat healthier, like me, some times it is hard to know where and how to start. This book is so easy to follow. First of all, there are 5 steps to gradually change the way you eat. Second there is a whole collection of recipes to help you stay on track. Third, there is a 3 week meal plan in the back of the book that will help you get started.
Plant-based foods can taste amazing with the right recipe!
I loved looking at all of the recipes. Some I am not brave enough to try just yet but others looked amazing. Here is one of my favorites.

One 20-ounce package mixed greens
1 bunch parsley
One ripe avocado, pitted
Juice of 2 lemons
1 tablespoon brown rice syrup or maple syrup (optional)
1 bunch cilantro, chopped
¼ red onion, minced
2 medium tomatoes, chopped
Chop the greens and parsley together, either by hand or in the food processor. Transfer to a large bowl.
In a small bowl, mash the avocado with the lemon juice and then mix in the rice syrup (if desired) as well as the cilantro, onion, and tomatoes. Toss the avocado mixture in the greens. Serves 2 for dinner, or 6-8 as a side salad.
