Morinaga Nutritional Foods has just released a “Make-Your-Own Tofu Kit.” Traditional Japanese silken tofu can be made in 4 easy steps in the comfort and convenience of your very own kitchen.
Open the soymilk, pour into your pot, and heat on medium/low. Right before the soymilk begins to film over, turn off the heat, and add in the nigari, it is very very important to to thoroughly mix within 3 seconds! It will not turn out correct if not done within this time frame. Trust me, I found out the hard way.
Let it sit for 5 minutes before you cut it ( half stirring ) with a spoon. Pour IN to the cheesecloth that you have placed IN the Tofu Maker Kit, fold the other part of the cheesecloth over the tofu mix, place the lid of the tofu kit on top and press gently. Place a heavy item ( bottle/bowl of water ) on top for at least another 5 minutes, but you can leave it on as long as 2 hours, to get all of the water out and firm up the tofu. While you are pressing the water out, prepare a cold water bath for the tofu in a large bowl. This makes it easier to unwrap your tofu without breaking it. Another tip I highly recommend because if you don’t it breaks everywhere. Something else I learned the hard way.
After all of the waiting, take off the press top, empty the cheesecloth wrapped tofu into the water bowl, and gently unwrap it. And TaDa you have made your very own Tofu! Fish it out and eat plain or with toppings. After all of my mistakes this turned out yummy and tasted as if we had bought it in a restaurant.
