Fish is so good for us, as it contains plenty of GOOD fats that help to keep us supple and looking young. People often make the mistake of thinking that fat makes us fat, but good fats like those in fish don’t make us fat at all – they’re insanely good for us and should be enjoyed on a regular basis! To make fish more interesting, there are a range of different toppings we can quickly put together that taste delicious! Here’s 4 quick and tasty toppings to get you started:
1. Salmon with Lemon and Dill
This is sure to be one of your new favourite salmon recipes.To make this fresh tasting topping, mix together half a spoonful of dill, half a spoonful of parsley, and half a spoonful of tarragon. Add about 2 teaspoons of lemon juice, or more if desired. You can also add a small amount of olive oil. Grate one clove of garlic, and mix everything together thoroughly before spreading on to the salmon as evenly as possible (you won’t get it perfect, so don’t worry) before cooking for 10-15 minutes. You can alter amounts to your tastes or the amount of people eating!
2. Cod with Cheddar Cheese and Crispy Breadcrumbs
This recipe is so simple and delicious. Lightly grease an oven proof dish, then line your dish with your cod. Add 3 spoonfuls of milk, and sprinkle a decent amount of white ground pepper. Beat a large egg, mix in your grated cheddar (about 125g), and pour this over your cod. Sprinkle over a couple of handfuls of homemade dried bread crumbs (pulse some toast or stale bread in a blender), and cook in the oven for half an hour.
3. Salmon with Whole Grain Mustard and Chilli
This topping has a bit of a kick for those who like hot food. Using a pestle and mortar, grind together a spoonful of wholegrain mustard, a spoonful of lemon, a clove of grated garlic, sea salt, crushed black pepper, and as much fresh chili as you can handle! Spread this onto your fish before cooking for 10-15 minutes.
4. Cod Pizza
For this healthy alternative to pizza, place some sun dried tomatoes and a spoonful of their oil into a blender or use a hand blender and whizz them into a paste. Add the paste to a bowl full of torn up basil leaves. Simmer a tin of tomatoes into a small saucepan for 10 minutes, and then combine that with the sun dried tomato paste and add sea salt and black pepper to taste. You can then spread this mixture over your fish, add some chopped mozzarella, and add sliced anchovies. Add olive halves pressed into the sauce if you like them!
